

Tuna Zpaghetti
Full Recipe
So this is another one of my recipes, back in my University days. I actually used to have this with spaghetti, of course, now I have it with zpaghetti (zoodles aka zucchini noodles). I also added a bit of miracle noodles in there cause I wanted a different texture. This tasted as delicious as when I had it in school, major comfort food. Food list and macro count below. Serves 2.
Ingredients:

2 tbsp butter
-
2 tbsp lard
-
2 tbsp tomato paste

1/4 c green onions
-
3/4 c bell peppers
-
1/4 tsp garlic salt

2 organic eggs
-
1 can tuna (in brine)

1 large zucchini
-
1 large hot chili pepper
-
salt and pepper to taste
-
1/4 c heavy cream (35%)

1/4 c crumbled feta cheese

1 tbsp organic extra virgin olive oil

How to Prepare:

In a skillet, fry green onions, bell peppers, tomato paste and spices in butter and lard for about 3 minutes.

Remove the tuna from the can and add to sauce mix.

Add in cream, feta and 2 eggs, in the last 2 minutes, and mix.

Remove from heat.

Spiral the zucchini noodles, and stir-fry in a separate skillet with olive oil for 30 seconds.

Serve hot sauce mix on zoodles (I added some miracle noodles for texture).
